Blueberry muffins
Ingredients:
2 cups rolled oats, 1 cup blueberries
1/4 cup protein powder, 2 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp of salt, 1/4 cup almond butter (no stir)
1/2 cup honey, 2/3 cup milk of choice
2 eggs , 1 tsp vanilla extract
-Grind oats in blender
-whisk together oats, protein powder, baking powder & baking soda,
-In a separate large bowl, mix together the nut butter & honey
- mix the milk, egg, and vanilla.
-Slowly mix all ingredients together
-folding in blueberries bake :350 for 22min
Broccoli egg casserole
Ingredients:
1 lb. lean Italian sausage
2 tbsp of olive oil
1 large clove garlic, minced
1 bunch broccoli rabe,
4 oz. Fontina cheese, grated
12 eggs, 1 1/2 cup heavy cream
1/4 c. basil leaves, 1/4 tsp black pepper 1/8 tsp. ground nutmeg
-cook sausage add in garlic.
-Boil broccoli till tender
whisk eggs, heavy cream, basil, 1½ tsp salt, pepper and nutmeg. Pour egg mixture into the baking dish on top of sausage & broccoli
bake for 350for 45min
Broccoli & Chicken salad
Ingredients:
4 cooked chicken breasts
1 handful of spinach
1 cucumber sliced, 1/2 red onion 1 green pepper, 1/2 avocado slice 2 cups cocktail tomatoes
1/2 cup Kalamata olives and broccoli
1/2 cup feta cheese crumbled
-Mix all ingredients in a bowl
Dressing;
1/4 cup olive oil, & lemon juice 1 teaspoon oregano & basil
1/2 teaspoon salt
1/2 teaspoon pepper
2Tbsp of mayonnaise
mix all together
Zoodle & bean pasta
Ingredients:
Ingredients:
1 lb. ground turkey
1 can of black beans & corn
5 cloves garlic, 1 egg, 1/2 c. Parmesan 2 tbsp. chopped parsley
1/4 tsp. crushed red pepper flakes
2 tbsp. olive oil ,
4 tbsp. butter,
1 lb. zoodles ,
Juice of 1/2 a lemon
-Mix turkey, garlic , egg, Parmesan, parsley, and red pepper flakes and form balls, bake in oven 350-30min
Add zoodles to skillet, toss with garlic, butter, and lemon juice.
Garnish with Parmesan
Strawberry crepe
INGREDIENTS
1/2 cup egg whites
1 scoop vanilla protein powder
In a bowl combine egg whites &
protein powder and whisk until
protein powder is dissolved. Scoop
about 1/2 of the mixture of the mix
into the pan and rotate pan around so the batter spreads thin.
Cook until the bottom is lightly
browned and flip it over to cook through. fill with fruit
